Creamy Goat Cheese Potatoes
4-5 large Yukon gold potatoes sliced 1/4 inch thick
1 large onion sliced 1/4 inch thick
4 ounces goat cheese crumbled
1 1/2 cups heavy cream
Preheat oven to 425 degrees
1. Layer potatoes, onions and cheese in a 2 quart casserole dish. Salt and pepper each layer as you go.
2. Pour heavy cream over the potato mixture.
3. Bake 45 minutes.
