Creamy Goat Cheese Potatoes

Oh my goodness! These potatoes are great! Plus they could not be easier. Yes they are rich but you don’t make them every day. Creamy goat cheese potatoes elevate a simple meal to extravagant.

Creamy Goat Cheese Potatoes

4-5 large Yukon gold potatoes sliced 1/4 inch thick

1 large onion sliced 1/4 inch thick

4 ounces goat cheese crumbled

1 1/2 cups heavy cream

Preheat oven to 425 degrees

1. Layer potatoes, onions and cheese in a 2 quart casserole dish. Salt and pepper each layer as you go.

2. Pour heavy cream over the potato mixture.

3. Bake 45 minutes.
