Feta Lamb Burger

I love lamb. It should be eaten more. You can cook lamb pretty much like beef but the flavor is sweet and distinct. Ground lamb is an affordable way to bring it into your diet. This sandwich is reminiscent of middle eastern fare. In Toledo we have a strong middle eastern community with many Lebanese and Greek restaurants. So these are familiar flavors to me. Tahini is simply ground sesame seeds and is available in most grocery stores.  This time of year I use cherry tomatoes as they have the most flavor. Once tomato season comes use the freshest local tomatoes.This looks like a lot of ingredients but it makes sauce, “salsa” and burger.

Feta Lamb Burger

 Sauce

1/2 cup yogurt

1/4 cup tahini

juice of 1 lemon

2-3 cloves grated garlic

Salsa

1 cup cucumber diced

1 cup cherry tomatoes quartered

5 green onions sliced

1/2 cup chopped pitted kalamata  olives

1/4 cup chopped fresh mint

1Tablespoon red wine vinegar

1/4 cup olive oil

Burger

1 1/2 pounds ground lamb

1/2 cup crumbled feta

2 teaspoon each dill and oregano

4 pitas

1. Combine sauce ingredients in a small bowl.

2. Combine salsa ingredients in a medium bowl.

3. Gently combine lamb, feta, herbs and salt and pepper. Form into burgers.

4. Broil on high about 4- minutes per side.

5.Layer the burger, salsa and sauce inside a slit pita.
